Mushroom-Steak with Purple-Potatoes

Summer Rolls – Fresh alternative to deep-fried spring rolls

What you need:

  • mango
  • 4 rice paper sheets
  • rice noodles
  • bell pepper
  • bean sprouts
  • smoked tofu (Use a mild one. You might find different kinds of smoked tofu in your whole food store)
  • lettuce
  • peanut butter
  • coconut milk
  • salt, pepper, nutritional yeast, paprika powder

How to do it:

Cook the noodles.

Prepare all ingredients by cutting them into thin slices and set them aside. How much you will need depends on the size of your rice papaer sheets.

Take one rice paper sheet at a time and dip into warm water for 5 seconds (not longer) and place it on a wet underground.

Put in all the ingredients und roll them into small handy packs or long rolls.

The Dip:

Take 200 ml of coconut milk and 5-6 tsp of peanut butter & the seasoning (add to you own preferance) & stir till it is creamy. I like to add chilli oil ot spice it up a little more.

Ready to serve!

Cashew-Cream for Dips, au Gratin & all kind of fillings

A simple soy and gluten free alternativ to soy- or oat cream.

What you will need:

  • 100 gr cashews
  • juice of a half lemon
  • pepper, salt, nutritional yeast & paprika powder
  • water
  • 2 tbsp olive oil (or an other kind of oil)

What you have to do:

Soak the cashews in water for at least one hour or longer. The soaking will make the cream smoother.

Put the cashews, the lemon juice, the seasonings & olive oil in a blender and cover the ingredients with water. Just so that they are covered. you can add water according to your desired consistency.

Blend till it is completely smooth.

If you want to have a sweet cream let pepper etc. out and replace with sweet seasonigs like cinnamon.
